Refrigerator Pickles (Barb Hines)
Hey...Lorna asked me to pass this idea along...there are radishes in the fridge that need good homes...I tried throwing some into my refrigerator pickle mix, and they turned out good...in my mix, I use a "loose" recipe:
1 qt. water 1 qt. white vinegar 1/2 c. canning salt 1/2 c. sugar garlic dill heads peppercorns hot peppers bay leaf 1/2 t. mustard seed You can use pickling spice mix, instead of individual spices Bring water, vinegar, salt and sugar to boil. Let cool. Place cukes, onions, green beans, garlic, zucchini, radishes, green peppers, etc. in ice cream tub. Pour pickling mix over mixture in tub. Add dill heads and seasoning. Place tub in refrigerator. Mix is great in a couple of days. You can add fresh items as you have them, and you can adjust the pickling mix and spices to your taste. These will keep for several months in your fridge.
